This is a very cool idea for making some money... you can do these custom for people who have fabrics that are special, old clothing that is special, or they have found some perfect antique cotton, or have a trunk full of grannies fabrics!.

Find yourself a really nice doll pattern, now this depends on your skill level, and the look you want.. if you want a very simple doll, then you can make them up very quickly, and not charge a lot, but if you want a more intricate doll, then you will need a good sewing pattern, and some doll making supplies, which you can get at your local craft store, or online.

You could end up making a very unique, one of a kind special doll for someone, who will love it as soon as they see it!.. This could be quite the niche for your crafts business, if you enjoy sewing, and sewing dolls, there are also bears you could make, it all depends on the fabric, and what it will be used for after, if its going to be for a small child, then you should not have any additional buttons etc, but if its for the "grown ups" and will sit on a shelf for display purposes, then you can go all out, and get as intricate as you want..
